2 tsp. baking powder

1 1/2 tsp. ground cinnamon

1/3 cup milk

2 whole eggs

3 tablespoons smooth applesauce

2 large apples (Granny Smith or Honey Crisp), peeled, cored, and diced

Canola oil, for frying

For the Glossy Glaze:

2 cups powdered sugar

1/4 cup milk

1/2 teaspoon pure vanilla extract

Preparation: Begin by setting cooling racks atop baking sheets lined with wax paper.
